About this deal

Now it’s time for the custard. You can make your own custard from scratch or using custard powder, but it’s a simple dessert, so store bought custard works just fine. Buy a good quality one. One thing to be aware of when it comes to using fruit in jelly is that some fresh fruits will prevent your jelly from setting; these include fresh pineapple, kiwi and papaya. Using these fruits are part of tinned mixture doesn’t seem to have that effect though…don’t ask me why. Trifle. Have you had it before? Living here in Australia, Trifle is something of a staple, especially around the holidays. And always when you have a hungry crowd to feed. Trifle sponges are a somewhat British ingredient but are no more than dry sponge cakes. As the cakes are dry they have the capacity to soak up a fair amount of liquid in a trifle, which makes them soft and also flavours the sponges. Minimum life based on 'use-by' date of product. Tiramisu is one of the most popular Italian desserts – and trifle sponge fingers are a must-have ingredient! Without trifle sponge fingers, your tiramisu will simply not taste the same. These delicious sponges feature a unique texture that turns creamy when soaked in coffee and sweet liqueur, making them an ideal complement for the iconic mascarpone cream. For the Swiss roll, whisk the eggs and sugar together in a large bowl until the mixture is light and frothy and the whisk leaves a trail when lifted out. Sift the flour into the mixture and carefully fold it in. Turn the mixture into the prepared tin and give it a gentle shake so that the mixture finds its own level, making sure that it has spread evenly to the corners. Ideally, your trifle will have time in the fridge to soak – overnight is perfect. All the flavours will meld together and the cake will soften. It tastes just how you would expect – sweet, creamy and altogether delightful. HOW TO MAKE PERFECT TRIFLE

Cut the Swiss roll into 14 slices. Carefully arrange eight of the slices, closely together, around the sides of a 20cm/8in, straight sided, glass bowl, with the cut, rolled sides facing outwards. Turn the cake out onto the sugared parchment and peel off the paper. Trim the edges of the sponge with a sharp knife to give straight clean edges. Make a score mark running down one of the long sides, about 2cm/1in in from the edge, being careful not to cut right through.

Frozen Berries are ideal here so you can make this berry trifle at any time of year. I like this summer fruits mix, but any similar mix of berries will do. Or use fresh berries instead if you prefer, (and you can omit the sprinkle of caster sugar if you do, as fresh berries are a little sweeter already). Add one third (approximately 1 and 1/3 cups) of the fresh berries on top of the cake, along with half of the jelly squares. Then, pour over 1 cup of custard. The final layer of your trifle is the cream. For peace of mind, Granny recommends using whipping cream; as it is easier to whip without the risk of over-whipping. However, I tend to find that whipping cream isn’t as readily available, compared to double cream. For that reason, I have listed double cream as a choice too. Both give fabulous results, just be cautious not to over-whip your double cream! (Or use whipping cream if you’re concerned).

Genoise sponge is a classic French sponge cake, but originally from Italy, that’s known for its light, airy texture. Ingredients for gluten-free trifle sponge recipeThe type of fruits can vary – some use tinned peaches, others use fresh mangos – but I always use berries. For those of you who aren’t lemon lovers however, it’s fine to use something alternative. Maybe try substituting a favourite jam to spread on the sponges (or just use the compote that is already in the recipe). You get the purists who make everything from scratch, you get booze soaked trifles… and then you get my really easy trifle recipe. Whip the cream until soft peaks form when you remove the whisk from the mixture. Spoon the cream over the top of the trifle, starting from the outside and working in. This will avoid the cream sinking into the custard. Whisk the egg whites until they are firm and hold their shape, then fold gently into the yolk mixture.
